  6. ½ cup of broccoli florets, blanched
  7. ½ cup of bean sprouts

Salad Dressing

  1. ½ cup of lime juice
  2. ¼ cup of peanuts
  3. 2 tablespoons light soy sauce
  4. 2 tablespoons vinegar or tamarind juice
  5. 2 tablespoons palm sugar
  6. 1 tablespoon dried red chillies, ground
  7. 1 tablespoon toasted rice


  1. Line a serving bowl with the lettuce leaves.
  2. Toss onions, tomatoes, cucumber, Thai jalapenos, broccoli and bean sprouts together and place on the lettuce.
  3. Garnish with coriander leaves.
  4. For dressing, in a pan, toast the peanuts until light golden brown, allow them to cool and then grind them.
  5. Next, toast 2 tablespoons of uncooked long grain rice (either white or brown) in a pan and then when cool, grind to a coarse powder.
  6. Combine all the remaining ingredients along with crushed peanuts and rice powder to form the dressing, and place in a small bowl.

3. Thai Style Green Salad

Ingredients (For serving 2)

  1. 1 tablespoon peanut oil
  2. 1 tablespoon fresh lime juice
  3. 2 tablespoons sweet chilli sauce
  4. 2 tablespoons fish sauce
  5. 150g cucumber, chopped
  6. 1 medium carrot, chopped
  7. ½  medium red capsicum
  8. 150 g Lettuce leaves
  9. 1 medium onion, sliced thinly
  10. 1 cup fresh coriander leaves
  11. 1 cup fresh mint leaves
  12. 1 cup bean sprouts
  13. 2 tablespoons toasted sesame seeds


  1. Arrange the lettuce leaves on a large platter.
  2. Cut cucumber, carrot and capsicum into long, thin strips.
  3. Top the lettuce leaves with cucumber, carrot, capsicum and onion.
  4. Sprinkle with herbs and bean sprouts.
  5. For dressing, combine the oil, juice and sauces in a bowl.
