Pick any cake mix you like—even the flavor!
While this recipe calls for lemon cake mix or chocolate cake mix, guess what? You don’t have to stick to those two flavors. You could make any type of cake cookie you like by simply grabbing whichever cake flavor you desire. Would you rather Red Velvet cake cookies, or Carrot Cake cookies? Grab a box of that mix instead and simply follow the same recipe. It’s that easy!
Chocolate & Lemon Cake Cookies
Makes 24-30 cookies
1 box cake mix (lemon or chocolate)
1 8 oz. container Cool Whip
How to Make It
Want to know why this recipe is so special? Because you can use any box cake mix that you like! For this recipe, I made two different kinds of cookies—lemon and chocolate. However, you can follow the same recipe with any other flavor mix. The possibilities are practically endless!
Mix together those three ingredients in a large bowl with a spatula. This may take some time, and yes, things will get a little messy. But if you want fluffy cookies, I suggest mixing slowly. You can also mix the ingredients in an electric mixer—just make sure it’s on a low setting.
Drop small spoonfuls of the cookie mixture into a bowl of powdered sugar. Make sure they are small! These cookies do expand quite a bit, so if they are too big, you’ll end up with a large cookie that expands the entire width of the sheet pan.
If you have the time, I sometimes find it helpful to chill the dough for 30 minutes before doing this step. That way I can easily scoop smaller portions, and there’s less sticky cake mixture on my hands.
When the cookies are prepped, bake them in the oven at 350 degrees for 10 to 12 minutes.
Full Cake Cookie Recipe
- Preheat the oven to 350 degrees.
- Mix together the cake mix of your choice, one egg, and an 8 oz. container of Cool Whip in a large bowl.
- If you have time, chill the dough in the fridge for 30 minutes for easier handling later.
- Drop small spoonfuls of dough into a bowl of powdered sugar, then place the cake cookie dough balls on a sheet pan lined with parchment paper.
- Bake the cookies for 10 to 12 minutes. Let them cool for a bit before removing from the pan.
