Whole30 Lime Avocado Mousse Recipe



Regular limes work beautifully in this luscious Whole30 lime avocado mousse, but if you can find key limes, use them! They have a stronger citrusy flavor and higher acidity, which cuts well through the creaminess of the cashews and avocado. This recipe is so thick and rich you’ll swear there must be dairy in it. But it’s actually vegan and clean enough for the dreaded 30-day cleanse.

Makes 2 servings


1/2 cup canned full-fat coconut milk
1 cup cashews, soaked overnight
1/2 cup date syrup
2 avocados
4 limes, zested and juiced
Pinch of sea salt

How to Make It

  1. Blend the coconut oil, cashews, and date syrup in a food processor until smooth. Add the avocados, lime zest and juice, and salt, and blend until airy and smooth. Divide between ramekins or small glasses and serve chilled.
